Greek New Years Cake

Instructions

To make Greek New Years Cake, or Vaselopita, first preheat your oven to 350 degrees and grease a 10 inch round pan.

In a medium bowl, mix the butter and sugar together until the mixture is creamed and light. Stir in flour and mix until mealy. Add eggs one at a time, mixing well after each. Mix baking powder and milk, then add to the egg mixture and combine well. Next, combine lemon juice and baking soda and stir into the batter.

Pour the batter into your prepared cake pan. Bake for 20 minutes. Remove your cake and sprinkle nuts and sugar over the cake. Return to the oven for 20 – 30 minutes, or until the cake springs back to the touch.
After you remove the cake, carefully cut a small hole in the cake and place a quarter inside. Cover the hole with sugar and cool the cake for at least 10 minutes on a rack before moving onto a plate.

Serve Vaselopita warm. Everyone in the family gets a slice, traditionally, starting with the youngest. The person who finds the quarter in their piece gets good luck for the entire new year!
